Red onions have a slightly sweet, pleasantly sharp flavour that's especially good raw, while cooking mellows them into something softer and sweeter. Keep a few on hand and you'll find yourself reaching for them for everything from tacos and salads to roasted vegetables.

Great For

Salads, burgers, sandwiches, tacos, salsa, Greek salad, grain bowls, roasting, grilling, kebabs and quick-pickled onions.

If raw onion is a little too strong for you, soak the slices in cold water for 10–15 minutes. They'll keep their crunch while losing some of that sharp bite.

Storage

Store whole red onions in a cool, dark, dry and well-ventilated place. Avoid sealed plastic bags, which can trap moisture.

Keep onions separate from potatoes to help both store longer. Once cut, cover and refrigerate.

Add tomatoes, cucumbers and feta for an easy Greek-inspired salad, or pair with potatoes, peppers and other seasonal vegetables for a sheet-pan dinner.

Good to Know

That beautiful purple-red colour comes from anthocyanins, the same family of naturally occurring plant pigments that give foods like blueberries and purple cabbage their colour.

Red onions are also one of our favourite onions for quick pickling. Vinegar mellows their sharpness while preserving their crunch—and turns them a brilliant pink.

How to Stretch This

Have half an onion hanging around in the fridge? Thinly slice it and make a small jar of quick-pickled onions.

They're fantastic on tacos, burgers, sandwiches, eggs, grain bowls and salads, and they'll turn that leftover half-onion into something you'll actually be looking for an excuse to eat.
