Carlos Rodriguez is a chef turned farmer. He learned to grow hands-on at Unearthed Organics under Jordan Marr, and started his own operation in early 2020 on a sixth of an acre of leased land matched through the BC Land Matching Program.

The produce feeds straight into chef-made condiments, sauces and prepared foods. The growing is done with organic methods and biological pest control, though the operation is not certified.

Two of those come through the shop regularly: a Sunrise tomato sauce, and a frozen pesto made from carrot tops, which is a neat use of a part of the plant most kitchens throw away.

Why we work with them

Carlos is a chef who learned to farm, and it shows in what he makes. The carrot-top pesto uses the part of the plant most kitchens bin, which is exactly the kind of thinking we like.

He grows the produce and then cooks it himself on a sixth of an acre. Small, careful, and made by someone who knows what the ingredient should taste like before it goes in the jar.
