Crisp, juicy and surprisingly tender, Napa cabbage is one of the easiest cabbages to use in everyday meals. Its pale green, crinkly leaves have a mild, slightly sweet flavour and are much more delicate than a traditional green storage cabbage.

It's delicious raw, but it also cooks incredibly quickly—making it an excellent vegetable to have around for stir-fries, noodle bowls and those nights when dinner needs to happen fast.

Great For

Slaws, salads, stir-fries, noodle bowls, dumplings, soups, fried rice, lettuce-style wraps and, of course, kimchi.

For an easy side dish, roughly chop the cabbage and stir-fry it over high heat with a little oil, garlic and soy sauce until the edges soften but the stems still have some crunch.

Storage

Store Napa cabbage refrigerated in the crisper drawer, ideally in a loose bag or container to keep it from drying out.

If you're only using part of the head, wrap or cover the cut end and return the rest to the refrigerator.

Build Your Basket

Add carrots, green onions and garlic for the beginnings of a quick stir-fry or slaw. Pair with mushrooms and noodles for an easy dinner, or grab radishes and other crunchy vegetables for a fresh salad.

Good to Know

Napa cabbage may look a bit like a cross between lettuce and cabbage, but it's actually a type of Chinese cabbage.

Unlike dense storage cabbage, both the leafy green portions and the thick white ribs are delicious. The ribs stay juicy and crunchy while the leaves become tender very quickly when cooked. If you're stir-frying it, add the chopped stems first and the leafy portions toward the end.

How to Stretch This

A big head doesn't have to become one enormous batch of slaw. Use the tender inner leaves raw for salads and wraps, then chop the sturdier outer leaves and stems into stir-fries, soups or fried rice later in the week.

And if you find yourself with more than you can use fresh, Napa cabbage's most famous transformation is also one of the best ways to preserve it: turn it into kimchi.
