Great For

Roasted potatoes, carrots and root vegetables, chicken, beef, lamb, soups, stews, focaccia, homemade bread, marinades and compound butter.

For an easy side, toss potatoes or carrots with olive oil, chopped rosemary, garlic and salt, then roast until golden.

Storage

Keep fresh rosemary refrigerated. For longer keeping, wrap the sprigs loosely in a slightly damp paper towel and place them in a bag or container in the fridge.

Good to Know

Unlike delicate herbs such as basil or cilantro, rosemary's sturdy leaves stand up beautifully to longer cooking. Add it early to roasted dishes, soups and stews so its flavour has time to infuse the food.

The leaves are edible, but the woody stems generally aren't. Hold the top of a sprig and run your fingers down the stem in the opposite direction of growth to quickly strip off the leaves before chopping.

How to Stretch This

Fresh rosemary is easy to save if you can't use the whole package. Let extra sprigs air-dry and store the dried leaves in a jar, or chop the leaves and freeze them for later cooking.

You can also finely chop leftover rosemary into softened butter with garlic and a pinch of salt, then refrigerate or freeze it for an instant flavour boost for potatoes, vegetables or bread.
