Kalettes are vegetable developed from crossing Kale with Brussel Sprouts to create a curly, open, rosette shape like a small kale plant growing along the stem of a Brussels sprout-like stalk. They have a mild, nutty, and slightly sweet flavor that becomes sweeter after a frost. They can be eaten raw, sautéed, roasted, or added to soups, and the entire plant is edible.
