Certified Organic Leeks — 12 oz
We love to cook with leeks. They're part of the onion family, but with a much milder, sweeter flavour—and you'll never shed a tear chopping a leek!
These Certified Organic leeks are grown on our farm at Shuswap Organics in Grindrod, BC. Use them anywhere you want a gentle onion flavour: slowly sauté them as the beginning of a soup, roast them until sweet and tender, or add them to potatoes, eggs and savoury pies.
Each bunch is approximately 12 oz and may contain one large leek or two smaller leeks, depending on the harvest.

Great For
Potato leek soup, chowders, stews, quiche, frittatas, pasta, risotto, gratins, roasted vegetables and savoury pies.
For something really simple, slice a leek lengthwise, drizzle with oil, season with salt and roast until tender and caramelized around the edges.
Storage
Keep leeks refrigerated in the crisper drawer, loosely wrapped or stored in a bag to prevent them from drying out.
Wait to wash and trim them until you're ready to cook.
Build Your Basket
Leeks and potatoes are a classic pairing for good reason. Add potatoes, garlic and cream for an easy soup, or grab eggs and cheese for a leek-filled frittata or quiche.
Good to Know
Leeks grow by pushing their tightly packed layers up through the soil, which means a surprising amount of dirt can hide between those layers.
To clean them, slice the leek lengthwise and rinse between the layers, or chop it first and swish the pieces around in a bowl of cold water. The dirt will sink while the chopped leeks float.
And don't automatically throw away the dark green tops. They're tougher than the pale portion, but they're full of flavour. Wash them well and add them to homemade stock, soups and long-simmered dishes.
How to Stretch This
Use the tender white and light-green portions in your meal, then save the darker tops in a freezer bag with carrot ends, onion trimmings and other vegetable scraps.
When the bag is full, you've got the beginnings of a homemade vegetable stock—and you've used almost the entire leek.
