Crisp, colourful and a little sharper than a sweet onion, these BC-grown red onions are a versatile kitchen staple. Their beautiful purple-red layers and slightly sweet, peppery flavour make them especially good anywhere the onion gets to stay visible—and taste like itself.
Use them raw for crunch and bite, cook them until mellow and sweet, or turn them into quick-pickled onions to keep in the fridge for topping just about everything.

Great For
Salads, burgers, sandwiches, tacos, salsa, Greek salad, grain bowls, roasting, grilling, kebabs and quick-pickled onions.
If raw onion tastes a little too strong for you, soak the slices in cold water for 10–15 minutes. They'll keep their crunch while losing some of their sharp bite.
Storage
Store whole red onions in a cool, dark, dry and well-ventilated place. Avoid storing them in a sealed plastic bag, which can trap moisture.
Keep onions separate from potatoes, as storing them together can shorten the storage life of both.
Once cut, cover and refrigerate.

Add tomatoes, cucumbers and feta for an easy Greek-inspired salad, or pair with peppers and potatoes for roasted vegetables or sheet-pan dinners.
Good to Know
That beautiful purple-red colour isn't just for looks. Red onions contain anthocyanins, the same family of naturally occurring pigments responsible for the red, purple and blue colours in foods like berries and purple cabbage.

Have half an onion hanging around in the fridge? Make quick-pickled red onions. Thinly slice it and cover with a simple vinegar brine. Once softened, they're an easy addition to tacos, sandwiches, burgers, eggs, grain bowls and salads—and a great way to make sure the rest of the onion gets eaten.
