Certified Organic Yellow Onions — Mara Valley Produce

The workhorse of the kitchen. These Certified Organic yellow onions are grown by Mara Valley Produce in Grindrod, BC and are the kind of staple we like to always have on hand.

Yellow onions have a good savoury onion flavour when raw, but cooking transforms them—softening their sharpness and bringing out their natural sweetness. They're the starting point for countless soups, sauces, stews and everyday dinners.

Why You’ll Love Them

  • Certified Organic

  • Grown locally in Grindrod, BC

  • Classic, versatile onion flavour

  • Becomes mild and sweet when cooked

  • Excellent for everyday cooking

  • A staple worth keeping in the pantry

Great For

Soups, stews, chili, pasta sauce, curries, stir-fries, tacos, casseroles, roasted vegetables, burgers and caramelized onions.

If a recipe starts with “cook the onions until softened,” this is probably the onion you want.

Storage

Store yellow onions in a cool, dark, dry and well-ventilated place. A basket, mesh bag or other container that allows air circulation works well.

Keep onions away from potatoes. Each releases moisture and gases that can cause the other to deteriorate more quickly.

Once cut, cover and refrigerate.

Build Your Basket

Add carrots, celery and garlic and you've got the beginnings of an incredible number of soups, stews and sauces. Pair with potatoes and other root vegetables for an easy roasted vegetable dinner.

Good to Know

Yellow onions are sharper when raw because cutting them damages their cells and releases sulphur-containing compounds—the same chemistry responsible for making your eyes water.

Cooking changes things dramatically. Given enough time and gentle heat, that sharpness mellows and the onion becomes increasingly sweet and savoury. It's why slowly cooked onions can taste so different from the vegetable you started with.

How to Stretch This

Have more onions than you'll use? Cook them now and save yourself work later.

Dice and sauté a batch, then freeze in small portions to give future soups, sauces and stews a head start. Or cook them low and slow until deeply golden for caramelized onions that can be frozen and pulled out for burgers, pizza, sandwiches or pasta.
