These Certified Organic baby pac choy are grown on our farm at Shuswap Organics in Grindrod, BC. They're quick to prep, quick to cook and versatile enough to toss into noodles, soups, rice bowls or just sauté with a little garlic and ginger.

Great For

Stir-fries, noodle bowls, soups, fried rice, curries, dumplings and quick vegetable sides.

For an easy side, slice lengthwise and sear cut-side down in a hot pan, then add a splash of soy sauce and a little garlic or ginger.

Storage

Keep pac choy refrigerated in the crisper drawer, ideally in a bag or container to prevent it from drying out.

Wait to wash it until you're ready to cook.

Add garlic, ginger and green onions for an easy stir-fry, or pair with mushrooms, carrots and noodles for a quick weeknight dinner.

Good to Know

Pac choy is a type of Chinese cabbage, and the whole thing is edible. The crisp stems and tender green leaves simply cook at different speeds.

If you're chopping it for a stir-fry, add the stems first and the leafy tops a minute or two later. That way the stems stay pleasantly crisp while the greens become tender instead of overcooked.

How to Stretch This

Pac choy is an excellent clean-out-the-fridge vegetable. A couple of heads can turn leftover rice, noodles and bits of other vegetables into a quick stir-fry.

If it starts to wilt, it's still perfect for cooked dishes. Chop it into soup, fried rice or noodles rather than tossing it.
