Certified Organic Huckleberry Gold Potatoes

These might be some of the prettiest potatoes of the season. Huckleberry Gold potatoes have deep purple skin wrapped around beautiful golden-yellow flesh, and these ones are Certified Organic and grown by Song Hollow Farm in Grindrod, BC.

They have a creamy, slightly waxy texture that holds together nicely when cooked, making them especially good for roasting, boiling and potato salads. And with that purple-and-gold colouring, there's really no reason to peel them.

Great For

Roasting, boiling, potato salad, smashed potatoes, soups, sheet-pan dinners and breakfast potatoes.

For an easy side, halve them, leave those beautiful skins on, toss with oil and salt and roast until crisp and golden around the edges.

Storage

Store potatoes in a cool, dark, dry and well-ventilated place, away from direct sunlight.

Keep them separate from onions, and don't wash them until you're ready to cook.

Good to Know

Huckleberry Gold isn't just a fun name. It's a relatively modern potato variety developed through the Tri-State Potato Breeding Program in the Pacific Northwest.

The variety was created by crossing Agria, a yellow-fleshed potato, with another breeding line, eventually giving us this unusual combination of purple skin and deeply yellow flesh.

It also has a lower starch content than many potatoes, giving it a waxier texture that helps the pieces stay intact when they're boiled or roasted.

How to Stretch This

Don't peel them! Give the potatoes a good scrub and leave those colourful skins right where they are.

Cook a few extras while you're making dinner and refrigerate the leftovers. Cold cooked Huckleberry Golds are perfect for potato salad, breakfast potatoes or smashed onto a baking sheet and roasted again until crispy.
