If you love cooking with onions and garlic, shallots deserve a place in your kitchen. These little members of the onion family have a delicate, slightly sweet flavour that falls somewhere between the two, making them especially good when you want onion flavour without overpowering everything else.
These Certified Organic shallots are grown by Mara Valley Organics in Grindrod, BC, practically neighbours of ours here at Nature Delivered.
They're a small ingredient that can make a big difference in everyday cooking.

Great For
Salad dressings, vinaigrettes, sauces, soups, risotto, pasta, roasted vegetables, stir-fries, caramelizing and pickling.
One of our favourite ways to use shallots is in a simple homemade vinaigrette. Finely mince a shallot and whisk it with olive oil, vinegar, Dijon mustard and a little honey. Let it sit for 10 minutes to mellow the sharpness, then toss with your favourite greens.
They're also delicious sautéed slowly in butter and added to mushrooms, green beans or mashed potatoes.
Storage
Store whole, unpeeled shallots in a cool, dark, dry and well-ventilated place, just as you would storage onions.
Avoid storing them in sealed plastic bags, which can trap moisture.
Once cut or peeled, refrigerate in a sealed container and use within a few days.
Build Your Basket
Pair with mushrooms and fresh thyme for an easy savoury side dish, or add salad greens, Dijon mustard and local honey for homemade vinaigrette.
Shallots are also particularly good with potatoes, green beans, roasted squash and fresh herbs.
Good to Know
Shallots aren't just small onions!
Although closely related to onions, shallots have their own distinctive flavour and growing habit. Many varieties grow in clusters of bulbs, a little like garlic.
Their flavour is generally milder and more delicate than regular onions, which makes them particularly useful in dishes where the onion is eaten raw.
And while shallots can replace onions in many recipes, their subtle sweetness really shines in dressings, butter sauces and gently cooked dishes.
How to Stretch This
A little shallot goes a long way, especially when finely minced.
If you only need half for a recipe, refrigerate the remaining portion and use it in scrambled eggs, a salad dressing or tomorrow's dinner.
You can also slice and freeze extra shallots for future cooked dishes, or quick-pickle them in vinegar for salads, sandwiches and grain bowls.
Don't throw away the papery skins, either. Clean shallot skins can go into your vegetable-scrap bag for homemade stock.
