Certified Organic BC Acorn Squash
Acorn squash is one of those wonderfully simple fall vegetables: cut it in half, scoop out the seeds, roast it, and you've practically made dinner.
These Certified Organic acorn squash are grown in BC, with sweet, golden-orange flesh and a mild, slightly nutty flavour. Their smaller size and natural bowl shape make them especially good for roasting whole or stuffing.

Great For
Roasting, stuffing, soups, purées, curries, grain bowls, casseroles and fall side dishes.
For the easiest version, cut the squash in half, scoop out the seeds and roast cut-side down until tender. Flip it over and add butter, salt and pepper—or go sweet with a little maple syrup and cinnamon.
Storage
One of the best things about winter squash is that there's no rush to use it.
Store whole acorn squash in a cool, dry place with good air circulation. There's no need to refrigerate it before cutting.
Once cut, refrigerate and use within several days.
Build Your Basket
For savoury squash, add onions, garlic, sage or thyme. For an easy stuffed squash dinner, grab sausage or ground meat, onions and greens.
Acorn squash is also delicious with apples, maple syrup, walnuts, brown sugar and warming spices.
Good to Know
You can eat the skin!
Acorn squash skin softens as it cooks and is completely edible, so there's no need to wrestle with peeling all those ridges before dinner.
And don't automatically toss the seeds. Rinse them, dry them, toss with a little oil and salt and roast them just like pumpkin seeds.
How to Stretch This
Roast the whole squash while the oven is on, even if you only need half for dinner.
Scoop leftover cooked squash into soups, curries, pasta sauces or muffins, or mash it with butter for an easy side dish. Cooked squash also freezes well, so extra doesn't need to go to waste.
