Great For

Roasting, soups, curries, pasta sauces, risotto, casseroles, purées and baking.

For an easy side dish, peel and cube your squash, toss with oil and salt, and roast until the edges are browned and caramelized.

Or skip the peeling altogether: cut it in half lengthwise, scoop out the seeds and roast until tender, then scoop the cooked flesh straight from the skin.

Storage

Store whole butternut squash in a cool, dry place with good air circulation. There’s no need to refrigerate it before cutting.

Once cut, refrigerate and use within several days.

Build Your Basket

Pair with onions, garlic and sage for soup or pasta sauce, or add chickpeas and greens for an easy curry.

Butternut is also delicious with apples, maple syrup, rosemary, thyme, Parmesan and goat cheese.

Good to Know

Butternut is a winter squash, which doesn't mean it's grown in the middle of winter. The name refers to squash varieties that are harvested mature, cured and can be stored well beyond harvest.

That long storage life is one of the reasons winter squash has traditionally been such an important cool-weather food—you can harvest it in the fall and keep eating locally grown squash long after the fields have frozen.

How to Stretch This

Roast more than you need. Leftover cooked butternut can become tomorrow's soup, get stirred into pasta or risotto, added to a curry, or blended into a creamy sauce.

Cooked squash also freezes beautifully. Purée or cube the leftovers and freeze them in portions for future meals.

And don't toss the seeds: clean them, toss with a little oil and salt, and roast until crisp.
