Certified Organic BC Delicata Squash

If peeling winter squash is the part you could happily live without, delicata is your squash.

These Certified Organic delicata squash are grown in BC and have thin, tender skin that’s completely edible once cooked. Inside, the golden flesh is sweet, creamy and slightly nutty—somewhere between squash and sweet potato.

Why You’ll Love It

  • Certified Organic

  • Grown in BC

  • No peeling required

  • Sweet, creamy flesh

  • Quick and easy to prepare

  • Excellent roasted

  • Smaller size is handy when you don't need a giant squash

Great For

Roasting, sheet-pan dinners, grain bowls, salads, tacos, curries and simple fall side dishes.

Our favourite easy method: slice it in half lengthwise, scoop out the seeds, then cut into half-moons. Toss with oil and salt and roast until tender and caramelized around the edges.

Storage

Store whole delicata squash in a cool, dry place with good air circulation.

Once cut, refrigerate and use within several days.

Build Your Basket

Pair with onions, garlic and fresh sage for an easy roasted vegetable dinner.

Delicata is also particularly good with apples, maple syrup, goat cheese, feta, walnuts, sausage and hearty greens.

Good to Know

Unlike tougher-skinned winter squash such as butternut, delicata has thin skin that becomes tender when cooked, so you can eat the whole thing.

That makes it one of the easiest winter squashes to prepare: wash, cut, scoop out the seeds and cook. No wrestling with a vegetable peeler required.

How to Stretch This

Don't peel it—that's perfectly good food you'd be throwing away!

If the oven is already on, roast the whole squash and refrigerate any leftovers. Cold roasted delicata is delicious added to salads and grain bowls, or you can reheat it for tomorrow's lunch.

And just like pumpkin, the seeds are edible too. Clean them, toss with a little oil and salt, and roast until crisp.
