Certified Organic BC Red Kuri Squash

This is an amazingly versatile squash—it’s great for everything from pies to soup!

These Certified Organic Red Kuri squash are grown in BC, with beautiful reddish-orange skin and smooth golden flesh. Red Kuri has a rich, sweet and nutty flavour with a creamy texture that works just as well in baking as it does in savoury fall and winter meals.

Why You’ll Love It

  • Certified Organic

  • Grown in BC

  • Rich, sweet and nutty flavour

  • Smooth, creamy texture

  • Works in both sweet and savoury recipes

  • Edible skin—no peeling required

  • Great for everything from soup to pie

Great For

Roasting, soups, stews, curries, casseroles, risotto, purées, pasta sauces, muffins, quick breads and squash pie.

For an easy side, cut it into wedges, scoop out the seeds, toss with oil and salt and roast with the skin on until tender and caramelized.

Storage

Store whole Red Kuri squash in a cool, dry place with good air circulation. There’s no need to refrigerate it before cutting.

Once cut, refrigerate and use within several days.

Build Your Basket

For savoury cooking, pair it with onions, garlic, sage, rosemary, ginger or hearty greens.

Going sweet? Add maple syrup and warming spices like cinnamon, ginger and nutmeg. Its smooth flesh makes it a great alternative to pumpkin in fall baking.

Good to Know

You don’t need to peel Red Kuri.

Its beautiful red-orange skin becomes tender when cooked and can be eaten right along with the flesh. If you’re making soup, you can cook the squash with the skin on and blend everything together.

Red Kuri is also sometimes called Hokkaido squash, and its distinctive sweet, nutty flavour is often compared to chestnuts.

How to Stretch This

Cook the whole squash, even if your recipe only needs part of it.

Leftover cooked Red Kuri can become tomorrow’s soup, get stirred into pasta or risotto, added to a curry, or puréed and frozen for future baking.

And don’t toss the seeds—clean them, add a little oil and salt, and roast them until crisp.
