Purple Top Turnips — 1 lb

Turnips are one of those humble root vegetables that deserve a little more attention. With their beautiful purple tops, creamy white flesh and mildly sweet, peppery flavour, they're a versatile addition to cool-weather cooking.

Purple Top Turnips are delicious roasted, mashed or added to soups and stews. They have a lighter texture than potatoes and develop a mellow sweetness when cooked.

Sold in 1 lb portions.

  • Beautiful purple-and-white colouring

  • Tender and mellow when cooked

  • Delicious roasted, mashed or simmered

  • Can be enjoyed raw or cooked

  • A versatile, budget-friendly root vegetable

  • Sold in 1 lb portions

Great For

Roasting, mashing, soups, stews, gratins, curries, stir-fries and raw vegetable slaws.

If you're new to turnips, roasting is a great place to start. Peel if needed, cut into cubes, toss with olive oil and salt, and roast until tender and lightly caramelized.

They're also lovely mashed with potatoes and butter, or added to a hearty beef or vegetable stew.

Storage

Store turnips in the refrigerator's crisper drawer, ideally in a bag or container to prevent moisture loss.

If they arrive with greens attached, remove the tops before storing the roots. The greens are edible too!

Build Your Basket

Pair with carrots, potatoes and onions for a tray of roasted root vegetables, or add leeks, garlic and broth for a simple winter soup.

Turnips are also delicious with butter, thyme, rosemary, cream and Parmesan.

Good to Know

Turnips and rutabagas aren't the same vegetable, although they're often confused.

Purple Top Turnips are generally smaller, with white flesh and a mildly peppery flavour. Rutabagas tend to be larger, with yellow flesh and a sweeter, earthier taste.

And here's something interesting about that purple colouring: the exposed shoulders of Purple Top Turnips develop their distinctive purple pigmentation in response to sunlight, while the portion growing underground remains white.

How to Stretch This

Try mixing turnips with potatoes in your next batch of mash. You'll get the familiar creamy texture of mashed potatoes with a little extra flavour and another vegetable worked into dinner.

Leftover roasted turnips can be added to breakfast hash, soups or curries.

Smaller, tender turnips can also be grated or thinly sliced into slaws, so there's no need to cook every last one.

If your turnips arrive with fresh greens, sauté them with garlic and olive oil rather than throwing them away.

A Note About Your Order

Sold in approximately 1 lb portions. Because turnips naturally vary in size, the number of turnips in each order may vary.
