Great For
Steaming, blanching, sautéing, roasting, stir-fries, curries, salads, casseroles and pickling.
For perfectly tender-crisp beans, don't cook them for long. A quick steam, blanch or sauté is usually all they need. Finish with butter, salt and a squeeze of lemon.
Storage
Store green beans unwashed in the refrigerator, ideally in a loose bag or container in your crisper drawer. Too much moisture can encourage them to spoil, so wash them just before using.

Good to Know
Green beans are sometimes called string beans, but most modern varieties don't actually have the tough "string" that older bean varieties were known for.
And while we eat them as a vegetable, botanically the bean pod is actually a fruit—we're eating it while the seeds inside are still young and tender.
How to Stretch This
If you have more beans than you'll get through, they're very easy to freeze. Trim and blanch them briefly in boiling water, cool quickly in ice water, dry and freeze. Blanching first helps them hold onto their colour, flavour and texture better than freezing them raw.
They're also fantastic made into dilly beans if you're looking for a way to preserve a bigger batch.
