Jalapeños have a fresh, slightly grassy pepper flavour alongside their heat, which makes them useful for much more than simply making food spicy. Chop them into salsa, slice them over tacos, roast them, pickle them or stuff them with something delicious.

Great For
Salsa, tacos, nachos, chili, eggs, burgers, quesadillas, cornbread, stir-fries, marinades, hot sauce and quick-pickled peppers.
For less heat, remove the pale inner ribs and seeds before chopping. If you like things hotter, leave them in.
Storage
Store jalapeños refrigerated in the crisper drawer, ideally in a loose bag or container. Keep them dry until you're ready to use them.

Add tomatoes, red onion and cilantro for homemade salsa, or grab corn, peppers and onions for tacos, quesadillas or a quick sheet-pan dinner.
Good to Know
Jalapeños are generally considered a moderately hot chile pepper, but their heat can vary surprisingly widely from pepper to pepper. Growing conditions and the individual fruit can all influence how spicy it tastes.
And those little tan lines you sometimes see on jalapeños? They're called corking. They're a natural response as the pepper grows and aren't a sign that anything is wrong with it.
How to Stretch This
Have more jalapeños than you can use this week? Quick-pickle them and keep them in the fridge for tacos, sandwiches, nachos and burgers.
They're also incredibly easy to freeze. Chop or slice them, freeze in a single layer and transfer to a container once frozen. There's no need to thaw them before tossing a handful into chili, soup or cooked dishes.
