Certified Organic Fingerling Potatoes — 2 lbs

Small, flavourful and wonderfully easy to cook, these Certified Organic Fingerling Potatoes are grown on our farm, Shuswap Organics, in Grindrod, BC. Fingerlings have naturally thin skins, a creamy texture and a rich, earthy, slightly buttery flavour that makes even a very simple potato dish feel special.

Their long, narrow shape is part of their charm—and there's usually no need to peel them. Give them a scrub, cook them whole or slice them in half, and dinner is halfway there.

Great For

Roasting with garlic and herbs, warm or cold potato salads, sheet-pan dinners, grilling, boiling and smashing until crispy. They're especially delicious simply roasted with oil and salt until the outsides are golden and the centres are creamy.

Storage

Store potatoes in a cool, dark, dry place with good airflow, away from direct sunlight. Avoid storing them beside onions, which can cause both vegetables to spoil more quickly.

How to Stretch This

Don't peel them! The thin skins are delicious and leaving them on saves time and reduces waste. If you have leftover cooked fingerlings, refrigerate them and turn them into crispy breakfast potatoes, potato salad, or smash them into a hot pan for an easy side the next day.
